2 cups tomatoes (crushed)
1 cup onion (chopped)
8 oz. mushrooms
1 tsp Italian seasoning
1 cup shredded mozzarella (partially skimmed)
2 tbsp Parmesan cheese (grated)
2 cloves garlic
1 cup bell pepper (chopped)
1/2 tsp pepper
¼ tsp salt and red pepper
Directions
- Preheat oven to 425⁰F.
- Put squash halves in the microwave and add some water. Microwave it for 10-12 minutes until the sides are tender.
- On the other hand, add some oil to a skillet and heat on medium flame.
- Sauté all the vegetables and seasoning and then cook some more for blending the flavors.
- Poke the shells with a fork but keep them intact and place them in a bowl.
- Now, stir Parmesan, mozzarella, pepper and salt. Additionally, add tomato mixture and add them into halves if squashed.
- Bake again for 15 minutes to melt the cheese and warm the filling. Your squash boats are ready.
