8 oz. sweet potatoes
8 oz. lean beef (ground)
2 scallions
1 tbsp canola oil
1-2 canned Chipotle peppers (chopped)
2 tbsp tomato paste
1 tbsp paprika
6 Cloves Garlic
¼ cup shredded cheese
1 cup kidney beans
4 tsp sour cream (reduced-fat)
¼ tsp salt
1 lb Broccoli florets
Directions
- Preheat oven to 425 ⁰F and prepare the baking sheet.
- Prick sweet potatoes and bake till become tender.
- Cook beef, broccoli florets, and scallion together in a skillet at medium heat.
- Add Chipotle, tomato paste, garlic paste, and salt. When the paste becomes brown, cook again for a minute to evaporate water.
- Slice sweet potatoes in halves and add 1 cup of chili mixture. Bake again by putting cheese over it.
- You can garnish it with sour cheese and scallion green parts. Your meal is ready to be devoured!
