What’s more comforting than a green veggie bursting with flavor too? I believe nothing, the charred broccolini holds a piece of my heart, and believe me, I’m not exaggerating.
I get these sudden waves of doing a strict diet from time to time, but that’s just a thought I don’t particularly act upon (LOL!). I know it must sound like I’m such an undisciplined person but if you are a foodie, you will understand my reluctance.
So between all of this dilemma of doing diet or ditching it altogether, I stumbled upon charring broccolini. Steamed or stir-fried certainly tastes good, but goodness this charred flavor has no comparison.

1 lbs. Broccolini
4 tablespoons olive oil
1 ½ tablespoons chopped preserved lemon puree
2 tablespoons chopped capers
1 clove minced garlic
1 tablespoon lemon juice
½ teaspoon salt
3 tablespoons chopped parsley
3 tablespoons toasted seeds
½ teaspoon pepper flakes
½ cup cheese
Directions
- Preheat the skillet to high flame.
- In a bowl, add broccoli drizzle half of the olive oil, and toss gently.
- When the skillet is burning hot, put the broccolini evenly over the skillet.
- Roast the broccolini until the edges turn charred and crispy. The procedure will take 25 minutes however it entirely depends upon your flame as well.
- Remember to keep stirring and turning the sides from time to time to achieve perfect tenderness and charred effect.
- Now in the dressing bowl, add the remaining olive oil, lemon juice, capers, salt, and chopped parsley, and give a nice and thorough stir to this marinade.
- When the broccolini is charred enough, place it into this marinade while hot.
- Now put the broccolini on a serving plate and serve warm with pieces of lemon.

- If the broccolini doesn’t fit in the skillet, you can char it in two batches.
- Remember, garlic may cause burning which makes the charred broccolini bitter, so if it starts turning darker scoop them out and add at the end.
- It can also be made on a gas grill if you don’t have a skillet, but make sure that is hot enough to char.
- You can pre-cook the broccolini in hot boiling water, drain it properly, soak it in a kitchen towel, and then put it onto a skillet for perfect charring.
