An Italian Grinder Salad is what we need in our fully packed schedules. Don’t you think so? No cooking, no baking, and no whatsoever shenanigans just simply chop up the ingredients, make a smooth dressing and you are on the way to rock your meal.

This chopped high-protein salad calls for fresh veggies, deli meat, and homemade Italian dressing which tastes exactly like a classic Italian sub sandwich but without rolled up.

If you have ever visited Italy, you may know its sub sandwiches are heavenly and something you can’t miss for life. 

I could have been calling this chopped salad if I didn’t know better. But thanks to social media, its been called Italian Grinder salad as per viral TikTok trends.

Although, you can call it whatever you want just make sure you are adding the right ingredients these are the Sub sandwich’s filling but in a salad form.

But what exactly is a Grinder salad at its core? That’s what we need to know before we get a knife and start chopping. It’s like your typical Italian sub-sandwich but in a tangy, creamy, and crispy salad form. It’s full of flavors as it contains vegetables, processed meat, or creamy salad dressing. 

It’s not a stringent recipe as you can make changes that suit best your palate and preferences.  

You can add pepperoni if you like as I don’t like so I won’t swap up deli meat with this. You can even add black olives or some banana peppers, and still come up with a vibrant taste profile.

Regardless of me being on a calorie-deficit diet, I know some calories always make a way but that’s not something that happens with this grinder salad. You can have your cravings satiated without excessive calories.

Chopped Salad Ingredients 

Vegetables

Brussels Sprouts is the veggie that gives crunchiness to your grinder salad. It also gives a nice color-enhancing palatability. 

Iceberg lettuce is where the coolness comes from, this light crunchy goodie is what your salad needs.

Just chop out some red onions for a blast of flavor. Add some grape tomatoes, which enhance the overall flavor profile. 

Salami

You can add thinly sliced Salami for the protein which gives it its authentic grinder sub flavor. But again, if you aren’t into salami then swap it up with roasted turkey or beef.

Deli Ham

Here it is the main ingredients,  you can add to your grinder salad to get a sweet mild flavor that goes well with your ingredients. 

Cheese

The cheeses make your grinder salad an absolute delight, I have added parmesan, and cheddar cheese for the irresistible flavor.

To get tanginess and a slightly different flavor, I have added pickled jalapeños. Although the recipe calls for pepperoncini peppers, I didn’t have that so I added jalapeños.  

Chilli Flakes

It’s the star of our creamy dressing. It makes it extra smooth and rich but again not quite healthy. You can go for Greek yogurt or mix it with mayo to get a creamy base. 

Pepperoncini Pepper Liquid

As we have settled on the fact, that not all of us have a sweet tooth, we want extra tanginess and heat in our recipes. The juice from the canned pepperoncini pepper will give you exactly that. 

Italian Seasonings

Another taste-building ingredient you can’t possibly skip on. It’s a blend of herbs including rosemary, thyme, basil, and oregano giving the grinder salad the authentic Italian taste. 

Fresh Garlic

Although I have added freshly minced garlic I suppose not everyone likes it as bold as it tastes. So if you want a mild taste, use garlic powder or roasted garlic.

Red Wine Vinegar

A great combo to your cream base. It gives your desired tanginess. You can swap it up with apple cider vinegar as well but the flavor profile will alter.

  • This healthy appetizer is fulfilling on its own but if you want an extra kick, serve it as a side meal.
  • I have an obsession with having soups and salads at once, you can serve it along with either instant tomato soup or egg drop soup.
  • If you want to serve it with a main course, then I’ll suggest parmesan chicken and pizza with Ricotta cheese. 
  • If you want to pair it up with red meat, then make a combo with beef tomato, or if a lean protein is on the radar, go for honey-glazed chicken.
  • Sometimes, I serve it with baked, smashed, or accordion potatoes just to satiate my cravings.
  • Another suggestion I have for you to serve it with baked bread which is gluten-free and is wholesome with a whole-grain roll.
  • Think out of the box and make delicious combos that will make you addicted to this healthiest salad.

Variations In Your Grinder Salad

Want to take your salad game to the next level, bring on these substitutions and variations that taste delicious and super customizable. 

  • Don’t want to settle on processed meat? No worries, mix up roast beef, turkey, glazed chicken chunks, and whatever else suits your palate and aesthetics. 
  • Make your dressing on your own and customize it as per your liking. If you like it spicy, add pepperoncini pepper liquid, want it tangy add red wine vinegar. For sweetness, you can add some fructose syrup or a little bit of honey. 
  • If you want your grinder salad crunchy, add sun-dried tomatoes or finely chopped onions. 
  • You can add chopped green capsicum as well for the crunch but I didn’t add it as I’m not a fan of capsicum, it tastes bitter to me, I don’t know why, though.
  • I sometimes switch roasted red pepper with Kalamata olives, which taste ravishing.
  • You can add fresh basil leaves or any other herb instantly plucked from your veggies pot.
  • You can have a creamy heaven right at your table with my favorite avocado sauce it gives a nice contrast. You can add mayonnaise for extra creaminess. 
  • You can bring variations in cheese types as well. If you don’t have provolone cheese, go for parmesan, mozzarella, or even Swiss cheese tastes delicious. 
  • If you don’t want your salad to get soggy, add the dressing just before serving your grinder salad.

How To Store Grinder Salad?

Despite my eternal love for salads, it is usually left out. It worries me somehow because the fully dressed salad gets soggy easily. 

  • But still, you can store this grinder salad in a refrigerator for 1-2 days if kept in an airtight container. But, after 24-48 hours, it will start getting soggy and lose its crunch. 
  • Although I don’t mind munching on a soggy leftover salad if you have a pet peeve with that. Then let me suggest keeping all the ingredients separately in the refrigerator.  
  • Keep the chopped salad in one container and the dressing in another, when you have to consume just mix both, and tada your grinder salad is ready!

  • Chopped Salad 

  • 8 cups lettuce and Brussels sprouts 

  • ½ cup red onion (chopped)

  • 2 cups grape tomatoes (halved)

  • 1 cup sliced pepperoncini peppers

  • 1 cup ham chunks

  • 1 cup salami (thinly sliced)

  • 1 cup roasted turkey chunks

  • 1 cup cheddar cheese (shredded or chunks)

  • 1/8 cup pickled jalapeños 

  • 1/4 cup parmesan cheese

  • 1 teaspoon chilli flakes

  • Salad Dressing

  • ¾ cup mayonnaise

  • 2 tablespoons pepperoncini peppers juice

  • 2 tablespoons red wine vinegar 

  • 2 teaspoon Italian seasonings

  • 3 cloves garlic 

  • 1/2 teaspoon salt (or as per taste)

  • 1/4 cup parmesan cheese (shredded)

  • 1/4 teaspoon black pepper powder

Directions

  • In one bowl, add all the chopped salad ingredients including vegetables, ham, salami, cheddar, and parmesan cheese. Toss all the ingredients together. 
  • In another bowl, mix the salad dressing ingredients like mayonnaise,  red wine vinegar, parmesan, Italian seasoning, salt, pepper and pepperoncini pepper juice. You can add more vinegar if you feel like there’s room for more tanginess.
  • When you are serving, pour dressing over the salad and mix. Sprinkle some flakes over it.
  • Your Grinder salad is ready to be devoured wholeheartedly!

  • Choose the mayonnaise from a reputable brand or go for a simpler option, Greek yogurt.
  • You can mix up your deli meat by adding on turkey, prosciutto, or capicola for different tastes.
  • Never skip on cheese as those make this salad delicious and savory.
  • For crunchy toppings, you can add croutons and bread crumbs. 
  • Chop everything nicely and meticulously as that is the core of the recipe.
