Rotel Tacos don’t demand a festivity, right? Just throw the ingredients together and make it whenever you are in the mood.
You can go for hard shell Tacos or soft shell Tacos as both are cooked into meat and cheese and topped up with either sour cream, olives, or whatever you like.
Just hearing the word tacos makes me giddy, I believe it’s all because of the ritual we used to have since decades. We have a Taco night every fortnight and have a blast of fun. My mother made it by my granny’s recipe with all the spices nicely infused and tasted ravishing.
The taco-making is no rocket science, add a can of Rotel and get the heat your mouth craving. However, if you want extra spices just add raw jalapeño and hot sauce and ho your ears turns red with the spiciness.

You can choose any ground beef cut of your choice, however, you should choose a leaner one as that will have less grease.
You can even choose ground chicken breast cut or turkey. Chicken thighs can be chopped and used for this purpose.
Vegetables
I have added freshly chopped onions and garlic, however you can add onion and garlic powder as well.
Taco Seasoning
Although I have bought the taco seasoning from a mart. Such seasonings come in either packet form or as a blend.
You can make this seasoning yourself by mixing smoked paprika, onion, garlic powder, cumin, and Mexican oregano.
Tortilla
You can choose either hard taco shells or soft shells whichever you prefer. If you like vegan-friendly or gluten-free tortillas, then you can go for Plantain or Cassava Tortillas.
Cheese
You can choose cheddar, Colby jack, or American whichever suits best the recipe.
However, I’m using Velveeta cheese here. But let me give you a tip, a mixture of all these will just take the flavor of Rotel tacos to another level.
Rotel
You will come across many options but I always go for the ones with green chillies. You can either choose Rotel with habaneros or the fire-roasted one if you desire extra heat.
But again toppings vary, you can choose any of your liking, and the ingredients requirements vary accordingly.

There’s no limit to what you serve with these Rotel tacos. It’s all up to you to decide which food combo suits best your palette.
- You can serve it along with any salad, my favorite ones are Japanese spinach salad or simply sautéed veggies.
- You can use these fillings and make either Nachos, Quesadillas, or burrito wraps.
- You can serve it along with rice as well, I usually go for cheesy rice or fried rice whatever I’m in the mood for.
- You can stir-fry some beans and serve them with these Rotel Tacos to have a blast of flavor.
Variations In Rotel Tacos
You can enhance the flavor profile by adding some substitutions or customizing the recipe as per your preferences.
- Want an extra notch of flavor? Add some tomato paste to your taco mixture.
- If you aren’t using ground beef, you must soak up extra grease by using paper towels.
- If you want a nice color, make sure the skillet in which you are searing beef is hot enough.
- If you don’t want your rotel tacos to be extra salty, use low-sodium taco seasoning.
- Want a juicy and tender meat texture? Add water to meat and taco seasoning.
- If you want other toppings, add tortilla chips instead of tacos which builds up nice flavor.
- You should make a one-pan serving where you first make meat filling then add cheese and lastly Rotel over it.
How To Store Rotel Tacos?
Did you get some leftovers? No worries, there’s no need to throw it away.
- You can store it in an airtight container, just make sure to not expose it to moisture. It will stay fresh for straight 3 days, and after that starts to deteriorate.
- If you want to consume it afterward, just reheat it in the microwave for a few minutes and you are good to go.
- If you have made a Queso sauce along with it, you can store it in the fridge separately and reheat it in a pan by adding some milk to get a thinner consistency.

2.5 lbs. Lean ground beef
1 block Velveeta cheese
1 ounce taco seasoning
¼ cup milk
1 tablespoon chopped onion and garlic
1 can Rotel tomatoes (diced)

Directions
- You first need to sear your ground beef until a brown color is acquired. Drain the lean beef.
- Cut the Velveeta cheese into equal-sized 1-inch cubes.
- Now add your seared beef, cheese, Rotel tomatoes, milk, and taco seasoning into a cooker.
- Make sure your cooker is on low flame and continuously stir.
- Cover with the lid, and cook for 4 hours on the same flame.
- Now top your rotel tacos with any topping of your liking and serve along with tortilla wraps.
Notes
- You can adjust the spiciness in Rotel tacos. For extra heat, add hot Rotel diced tomatoes with habaneros, and for a milder touch, add original Rotel tomatoes and green chilies.
- You must warm the shells before assembling your tacos for better flavor.
- You can prevent mess on your tacos by doubling the amount of tortilla shells.
- You can save time by putting veggies and cooking beef beforehand and store in the refrigerator.
