Ingredients

  • 2 cups flour

  • 1 cup Blueberries

  • 3 tablespoons sugar 

  • Pinch of Salt

  • 1/8 cup vegetable oil

  • 1/8 teaspoon Baking soda

  • 1 cup milk

  • 1/4 teaspoon corn starch

  • 2 eggs

  • 1/4 teaspoon vanilla extract 

Directions

  • Begin by preheating the oven to 200⁰C and prepare muffin cups/trays by either cooking spray or brushing with oil.
  • Sift all the dry ingredients including flour, baking soda, cornstarch, sugar, and salt. Now add eggs, vanilla extract, and milk, and make a smooth batter. You can add blueberries puree as well or fold in blueberries at the end.
