Salad Prep
4 tsp lemon juice
1 tbsp olive oil
1 cucumber chunks
2 tomatoes chunks
1 avocado (cubed)
¼ tsp salt, pepper, and cumin powder
1 clove minced garlic
2 tbsp feta cheese
Frittata prep
2 medium potatoes (diced)
4 tsp olive oil
4 scallions
4 cups baby spinach
¼ tsp thyme, pepper
6 eggs
½ fat-free cottage cheese
½ fat-free cottage cheese
Directions
- To make the salad, add all the salad ingredients in a bowl and toss them to blend the flavors.
- To make frittata, keep potatoes in a microwave dish for 2 minutes until they become tender.
- Heat 2 tsp oil in a skillet over medium flame.
- Add mushrooms, salt and cook till liquid starts coming out. Now add spinach, scallions, and other spices and cook till spinach wilts and take it out on a plate.
- Whisk eggs and cottage cheese in a bowl now add mushroom mixture into it.
- Add 2 tbsp oil into a pan add the egg mixture into it and cook by lifting edges for about 3 minutes.
- Cover the lid and cook for 8 minutes until no liquid egg remains.
- Lift the frittata from the pan and serve with avocado salad and feta cheese.
Notes
- Using a 9-10 inches iron pan will make you perfect sized frittata which don’t spread out much.
- Don’t overcook the frittata to avoid making it rubbery and dry.
- You must bake frittata until the edges are golden brown.
